Little Nightmares III ships pillarboxed to 16:9 in both gameplay and cutscenes on ultrawide and super-ultrawide monitors out of the box; PCGamingWiki marks ultrawidescreen support as only 'hackable'. Because it runs on the same Unreal Engine 4.27.2 base as Little Nightmares II Enhanced Edition, modder Lyall's existing UltrawidePatches tool (built for that game) has been confirmed by the community to also remove the black bars here, and a separate Reshade addon can adjust FOV.
